Butternut squash and lentil massiman curry

A really quick and tasty vegetable curry, using green lentil, butternut squash, coconut milk and massiamn curry paste.

  • 1 tin coconut milk
  • 1 tbsp massiman curry paste
  • 1 tin green lentils
  • 1/2 small butternut squash
  • 1 handful spinach leaves
  • 1 small onion
  • 1 tbsp coconut oil


  1. chop up the onion.

    Peel the squash and cut up into small cubes

  2. add coconut oil to pan and fry the onion and squash for a few minutes.

  3. Add the massiman curry paste and stir. Drain tin of lentils and add to pan with coconut milk.

  4. Cook over a low heat until the squash is cooked. When squash is soft add the handful of spinach and serve.
