Butternut squash and lentil massiman curry
A really quick and tasty vegetable curry, using green lentil, butternut squash, coconut milk and massiamn curry paste.
- 1 tin coconut milk
- 1 tbsp massiman curry paste
- 1 tin green lentils
- 1/2 small butternut squash
- 1 handful spinach leaves
- 1 small onion
- 1 tbsp coconut oil
chop up the onion.
Peel the squash and cut up into small cubes
add coconut oil to pan and fry the onion and squash for a few minutes.
Add the massiman curry paste and stir. Drain tin of lentils and add to pan with coconut milk.
Cook over a low heat until the squash is cooked. When squash is soft add the handful of spinach and serve.
