Cashew Nut Cheese Spread
Although the cashews take awhile to soak and the garlic to cook, it is worth the wait.
You can always put the garlic in the oven when cooking another meal and store in fridge till you need it.
- 200 grams Cashew Nuts
- 1 Whole garlic bulb
- 1 tsp lemon juice
- 1 tsp yeast flakes
Soak the cashews for at least 2 hrs.
In the meantime, put garlic bulb in the oven, drizzle with olive oil and cook until soft.( no need to peel)
After 2 hrs drain the cashews and blend.
When the garlic is soft, squeeze the soft cloves out from the skin and add to cashew mix.
Add lemon juice and yeast flakes. Add more lemon juice and pinch of salt if required.
Serve with seed crackers, or vegetable crudités.
