A lentil soup with a hint of curry. Very quick and easy to make
Prep Time 5 minutes
Cook Time 15 minutes
Ingredients
- 1 tbsp olive oil extra virgin or whatever you have
- 1 small onion chopped
- 1 clove garlic crushed
- 1 tsp garam marsala level teaspoon depending on your preferred taste.
- 1¼ pints bone broth ( chicken) Approximately a pint you may need to add more, if the lentils absorb the liquid to quickly
- 250 grams orange lentils
Recipe Notes
Fry the chopped onion in the olive oil for a few minutes.
Add the crushed garlic and garam marsala powder and stir for a few minutes, don't allow to burn.
Add the lentils and stock and heat for approximately 10-15 mins. Keep an eye so it doesn't boil dry. Add more liquid if necessary.
Season with black pepper.
When lentils are soft, remove from heat and blend to a smooth soup.
Add coriander to garnish.
This makes a great sauce base for a sausage casserole. The kids won't even know that there are lentils in it!
