A really quick and easy veggie burger that even meat eaters will love!
Add the chopped onions to the pan with the olive oil and fry until onion is translucent.
Add the teaspoon of curry paste , you can add more if you like it spicy.
Add in the grated carrot, grated beetroot and green lentils.
Cook through for a few minutes to cook the curry paste.
Remove from the heat and add in the breadcrumbs and finely chopped corainder and allow to cool slightly.
When it is cool to the touch, empty onto floured worksurface and with floured hands, divide and shape into four good burgers.
Fry in a litle olive oil, and brown on both sides, turning carefully.
Serve with a green salad & brioche rolls. Enjoy !
